2001-2005, Restaurateur
Owned and Operated The Smokies Roast House and The Piki Grill restaurants located in the Hendersonville and Asheville regions of NC. Developed Roast House Ventures as a marketing base for several restaurant concepts to promote healthy, natural alternatives to fast food franchises in the fast-casual dining genre. Because the concepts were revolutionary, my family and I developed everything from the ground up including recipes, food item manufacture and control, inventory calculations, commissary provisions, concept and internet marketing, advertising campaigns, packaging design, capitalization and funding data, demography for FOC Franchising, architecture design and footprints, new cooking and food cost procedures, and several business plans. The concepts have been licensed out to a private firm for further development.
1992-2001, Creative Consultant/IC
Worked in capacities as freelance artist, designer, and contracted Creative Director. Projects involved both public and private projects and included: Package designs, advertisements, fine art, illustration, sign art, garment imprint art, logo designs, licensed works, digital designs, and murals. Worked in consultation with firms such as Nutmeg Mills, Mikohn Gaming, Yesco, Manatee Graphics, Days Inn, McDonalds Corporation, The Totally Fun Company, and others.
1985-1992, Executive Chef/F&B Management
From the Tropicana Resort and Casino in Las Vegas to The Sheraton International in Orlando, Duties included exacting numbers on monthly food costs, annual expenditures, P&L, overhead, and inventory control, creating original menus, recipes, overseeing banquet operations, catering, and private functions. As well, became the house crafter of ice sculptures and custom cake decorations.
1981-1987, Marketing Director
Created and implemented various art and marketing needs for Oro-Tech Industries, Inc., a multi-million dollar R&D production facility founded to exploit the technologies of black powder alternatives and products for primitive arms enthusiast's. Duties included trade show booth designs, shareholder memos, OFC authoring, SEC understandings, show displays, story boards, logo designs, copy writing, and original art for advertisements. Considered partly responsible for helping to create "Cowboy Action" tournament shooting, participating in many events, and featured in Guns Magazine - 1984, Guns and Ammo - 1987, and Shooting Times - 1984.
